Vegetable lab with coconut rice

With Jasmine Rice

Sweet and spicy both, this dish is surely going to tickle your taste buds. The sautéed mushroom and broccoli gives it lot of health benefits. Rice with little flavour of coconut milk powder makes it even yummier; to give a little kick to this dish we have added spicy marinated carrot. Try this dish and enjoy variety of flavours in a single plate.

Ingredients

  • 1 ½ cup of jasmine rice
  • 2 carrots
  • 1 lime
  • Mushrooms
  • Broccoli
  • Cabbage
  • Cilantro and mint
  • 4 tablespoon soy glaze
  • 3 tablespoon of peanut butter
  • 1 serrano pepper
  • 1 tablespoon brown sugar
  • ½ cup of coconut milk powder

Instructions


1. Organize the ingredients

It’s very important to organise the ingredients before you start cooking. It also helps in avoiding mess in kitchen. Most importantly wash all the fresh produces.
1. Peel and cut carrots on an angle.
2. Quarter the lime.
3. Take a bowl and mix water and coconut milk powder, mix it well.
4. Cut the mushroom, it should be thinly sliced.
5. Cut broccoli into small pieces.
6. Clean and cut mint leaves as well as cilantro leafs.
7. Cut and throw the end of pepper, also remove the seeds inside and cut them in circle shape.
8. Mix 1 small cut of water in peanut butter and whisk it well.


2. Starting Cooking

Marinate carrots Take a bowl and combine carrots, brown sugar, little lime juice and Serrano pepper as much spicy you want it to be. Sprinkle little salt and pepper on it. Keep it aside and start preparing other things.


3. Prepare the coconut rice

Take a bowl and put 2 cup of water in it let it boil, once water boils you can add rice to it and the coconut milk powder in it, mix it well and let it boil again. Once it boils you can low the flame. Cook it for 9-10 minutes you can see that water is completely absorbed by the rice, if rice is tender and cooked then off the flame and keep it aside.


4. Prepare the sauce

To prepare sauce take a bowl and mix peanut butter, soy glaze and ½ cup of water. Mix all of them really well and season it with little salt and pepper. Your sauce is ready, it’s too simple.


5. Cook mushroom

Take a non-stick pan and add 2 tablespoon of oil in it, when oil is hot add mushroom to it. Keep stirring it, you can cook it for almost 6-8 minutes. Sprinkle little salt and pepper to it. Once it is cooked keep it aside.


6. Cook the broccoli

In the same pan put little oil again and add broccoli once oil is hot, again season it with salt and pepper. It should be cooked till it looks brown in colour. To soften it we can add 1/3 cup of water. Once it is cooked add mushroom and sauce to it. Let it boil, if you feel it is too thick then you can add water to it, make sure that sauce is not too thin.


7. Prepare Curry

Take a plate and divide it in three portion. At one side keep the vegetables mixed in sauce then in between you can keep rice and on the other corner take a cabbage leaf and put marinated carrot on it. Sprinkle mint leaves and cilantro and your colourful super tasty dish is ready.
