Moroccan Chicken

With prunes and brown rice

Moroccan dishes are very exotic and layering of flavours does magic to their cuisines. In this dish you’ll enjoy three dominant flavours: tomatoes, dried fruit, and their warm spices. Ingredients

  • Chicken thighs
  • 1 ½ cup brown rice
  • Marzano tomatoes
  • 2 Carrots
  • 5 Cloves garlic
  • 4 scallions
  • 6 prunes
  • 2-3 tablespoon honey
  • 1 ½ tablespoon red wine vinegar
  • 1 ½ teaspoon Moroccan spice

Instructions


1. Organize your ingredients

It’s very important to organise the ingredients before you start cooking. It also helps in avoiding mess in kitchen. Most importantly wash all the fresh produces.
1. Peel and cut carrots
2. Mince the garlic
3. Cut scallions white and green portions separately
4. Cut prunes into small pieces


2. Cook brown rice

Cooking brown rice is not that tough. Do soak rice at least half an hour before you want to cook. After that take a pot and put rice into it, salt according to your taste and 3 cup of water. Let water boil and once it boils reduce the heat and let rice cook till water is absorbed by it. You can check the rice with fork; keep it aside once it is cooked.


3. Cook carrots

Take a pan and heat 2 tablespoon oil in it. Once oil is hot add carrots and mix salt and pepper to it. Keep stirring the carrots; cook them for about 5-6 minutes till they look little golden brown. Once they are cooked keep them aside in a bowl or a plate.


4. Cook chicken

Clean the chicken nicely and cut them in big square shape. Pat them dry and season it with salt and pepper. Take the same pan add 2 tablespoon of oil in to it. Add the chicken and cook it for 6-8 minutes each side till it looks golden brown. Once chicken is cooked keep it aside and start preparing for the gravy.


5. Make the gravy

In the same hot pan add 2 tablespoon of oil and add chopped garlic, prunes, white bottoms of scallions and the spice blend (Spice you can add according to your taste). If you want your dish to be too spicy then you can increase the quantity of spice blend. Cook the mixture nicely; stir it till you have amazing aroma of it. Once it is mixed properly you have to add other left items like tomatoes, honey, half the vinegar and ½ cup of water depending upon how thick gravy you want. Keep on stirring it and let it boil. Now add chicken into the sauce and cook for another 5-8 minutes, when you can see that gravy has thickened, turn off the heat and get ready to plate your dish.


6. Plate your dish

You have to mix carrot and 1 tablespoon of vinegar in cooked rice, mix it well and season it with salt and pepper, plate it with chicken. Serve it with sprinkled green tops of scallions. Enjoy the aroma of amazing Moroccan flavours.
