African Peanut Chicken

With lettuce and jasmine rice

Ingredients

  • Boneless chicken
  • 1 ½ cup jasmine rice
  • 4 garlic cloves
  • 3 scallions
  • 1 bunch lettuce
  • 3 tablespoon peanut butter
  • 1 ½ inches piece ginger
  • ½ cup coconut milk powder
  • 2 tablespoon white wine vinegar
  • 1 ½ tablespoon west African spice blend

Instructions


1. Organize your ingredients

It’s very important to organise the ingredients before you start cooking. It also helps in avoiding mess in kitchen. Most importantly wash all the fresh produces.
1. Peel and mince the garlic
2. Remove the root end of lettuce and chop them
3. Peel and mince the ginger
4. Cut the scallions, separate white bottom and green portion, keep them separately
Whish peanut butter in a bowl with water, the mixture should neither be too thick nor too thin, consistency should be maintained.
5. Take a bowl and mix coconut milk powder and water, 1 ½ cup of water, whisk it properly.


2. Cook the jasmine rice

1. First and foremost clean and soak the rice in a bowl.
2. Take a small pot, put rice in it, pinch of salt and 1 ½ cup of water, and let it boil on high, once water boils then reduce the heat.
3. You can see when water is completely absorbed, check whether rice is cooked or not, if cooked then remove it from heat and mix lime zest to it.


3. Cook chicken

Clean the chicken and pat it dry, sprinkle some salt and pepper on it. Take a pan heat 2 tablespoon of olive oil until it is hot. Now add the chicken, cook it for around 5-6 minutes per side till it is golden brown. Flip it and cook it for some more time. When it is properly cooked transfer it into a plate. Make sure chicken is properly cooked.


4. Cook the lettuce

Wipe the pan with tissue and heat 1 tablespoon of olive oil in it. Now add garlic and lettuce, season it with salt and pepper. Keep cooking it for few minutes on medium-high flame till it softens. Add ½ cup of water and cook till lettuce is wilted, once it is cooked then transfer it to a plate and keep it aside.


5. Making of sauce/ gravy

In the same pan heat 2 tablespoon of olive oil. Now add ginger, scallions (white bottoms) and as much spice blend you want, according to how much spicy you want your dish to be. Sprinkle some pepper and salt on it. Cook for 2-3 minutes and then add peanut butter mixture and coconut milk powder, do not forget to whisk them before putting in a pan. Now add cooked chicken into the sauce, mix it well, and cook it for more 7-8 minutes till consistency of sauce thickens. Turn off the flame and mix the remaining vinegar. Season it with salt and pepper and your dish is all set to serve.


6. Plate your dish
